We're not using it at a the University or Law School level yet.  Many
people forward their school accounts to google (yahoo and hotmail too),
so effectively it's in use.
 
As a graduate student myself I can say that most students are using
google.  My study group used Yahoo, then Folder Share and finally
google groups.  Google totally rocks for student study groups
collaborating on projects.  We were in Asia last month and I was a bit
concerned about access, but no problems.   We could easily have people
accessing documents, mail and lists simultaneously from around the
globe.  It was really a productivity enhancer.
 
Now if I was going to implement gmail at an enterprise level  I'd
seriously consider in-line encryption of messages (using PGP or
built-in Thunderbird support).  You'd still have a key management
issues, but hopefully you'd be less likely to accidentally expose
sensitive information to outside view.
